When I use a subviewportcontainer it renders on top of my whole screen, but when its just a standalone subviewport and its attatched to my mesh's material it works, but my inputs no longer work?

Mu guess you need to properly play with these settings on your control nodes

    kuligs2 i've tried messing with those and have had no luck getting it working
