Apple's headset is targeted at an early adopter for whom money is no object. Their headsets have better quality displays, materials and marketing, plus they have a few tricks up their sleeve (like eye tracking). They also have some limitations, like no controllers (making them a bad choice for VR gaming) and a much smaller software library.
The Apple headsets aren't exactly flying off the shelves. Maybe in part because the Quest headsets cover some of the same use cases for a lot less money.
