If you want to "make something completely original that's my own work", you're going to have to work on your graphics design skills. If an app makes sprites for you, it's not really your own work.
One approach is to use Inkscape to trace parts of a bitmapped image. It has a tool that makes that easy. The base image could be anything, a photo for example.
GodotBeginnerRich If you want an app for creating sprites, one you can use is Gimp. In that one, the main tool you'd use is the pencil tool with a 1-pixel brush. Mind you, Gimp can be a bit overwhelming if you haven't used it before. If necessary, look up some Gimp tutorials on drawing sprites. Here's a tutorial which may help to whet your appetite.
If that's a tall order for you, there are other apps to try: Piskel and Krita.
Depends a lot on what art style you're going for (vector, pixel, hand-drawn, etc.) and whether by "Sprite" you mean a still image or an animation with multiple frames. In addition to the previous suggestions:
I haven't used it myself but I hear people talking a lot about Aseprite for pixel art/animation, it's not free but they do have an Ubuntu version.
For vector animation, Synfig is an option which you can likely get through your distro's package manager.
A lot of people use Aseprite. I haven't tried it, but I watched some tutorial videos and it looks good. Not free but cheap.
You can also try Pixelorama, which is FOSS and built with Godot. It's not as fully featured, but should be okay for you.

Ertain GIMP's very similar to Adobe Photoshop, which I've used in the past (in fact as recently as last Thursday), I just suck at using both (although I did manage to draw a Batman logo in PS)
