I believe pck files are platform independent, as they just contain the data from your project. You can export a pck file by pressing “Export PCK/ZIP” in the Export window in the Godot editor (documentation).
I am not sure how you use the exported pck file with the server target though.
PCK files aren't always platform-independent, as they may contain different VRAM texture compression formats depending on the target. However, in practice, they usually are platform-independent.
